Vinegar-and-Oil Chocolate Cake

Cheryl Merrill

You mix this cake in the same pan you cook it in.  No fancy ingredients, just a few odd ones.

In a 13x9x2 glass pan mix together:
      2-1/4  cups flour; 1 t. salt; 4-1/2 T. unsweetened cocoa powder; 1-1/2 t. baking soda; 1-1/2 c. sugar.

Dig 3 holes in the dry ingredients: one small, one medium, one large.  Put 9T olive oil (1/2 c. + 2T) into the large hole.  Put 1-1/2 T. white vinegar into the medium hole.  And put
1/1/2 t. vanilla into the small hole.  Don't worry if the vinegar starts to fizz - it's reacting to the baking soda.

Pour 1-1/2 cups of water over the top of everything and mix well - so it looks like bubbly cake batter.

Bake at 350 degrees for around 30-35 minutes until an inserted toothpick comes out clean.

Let cool.  Sprinkle with powdered sugar.  May be frosted with frosting of choices.  Dare you to eat only one piece.
