Cat-Head Biscuits

A recipe from Jo McDougall

2 c. flour

2 tsp.salt

3 heaping tablespoons baking powder

3/4 c. milk

3/4 stick butter

Sift dry ingredients.

Cut in 3/4 stick soft butter; work into small grains or until the mixture is mealy.

Add 3/4 cup milk --more if needed to make the dough moist enough to form into a ball.

Roll ball out to about 1/2 inch thickness.  Cut into rounds with a biscuit cutter.

(In a pinch, a bourbon glass will do.)

Stack two rounds together for one biscuit.

Bake at 450 degrees 10-12 minutes until golden brown on top.

Makes 8-9 biscuits.

(Note: I had never called these anything except  just plain biscuits, but one day a friend observed that they were "big as a cat's head.")

(Also note: This is a Southern recipe.  Never, for any reason, add sugar to it.)
