Pumpkin-Sausage Pasta Sauce

This is an easy-to-make pasta dish that substitutes pumpkin for tomatoes.

Ingredients:

--Pasta
--Water
--Assorted Veggies (mushrooms, green peppers, squash,
onions, etc.)
--Sausage (your pick--kielbasa, sweet or hot Italian,
Andouille, etc.)
--1 large can of pumpkin
--Milk
--Wine (white or red)
--Fresh basil, sage, and oregeno
--Cinnamon and nutmeg
--Grated parmesan cheese


Directions:

1. Boil water for pasta and cook pasta al dente.

2. Saute sausage for five minutes and dry off excess fat with a paper towel. Set aside.

3. Saute veggies for approximately five minutes.

4. Stir in the canned pumpkin.

5. Add milk and wine to liquefy the pumpkin. Stir until the consistency is a thick liquid. Lower heat
to simmer.

6. Add a dash of cinnamon and nutmeg--not too much.

7. Add fresh herbs and sausage.

8. Continue stirring and add more milk and wine if necessary. Simmer.

9. Pour pumpkin sauce over pasta and top with parmesan cheese.
